(We are very sorry for the lower video quality – we briefly lost our temporary recording solution and we have since sought out a more permanent recording means; however, this episode and the previous one are not top-notch video quality. Our sincere apologies.)

One of the key ingredients to winemaking is patience, and in order to leave the blackberry wine alone, Stephany and I decided to start a new batch! Strawberry anyone???

In this episode, we create the strawberry must to prepare it for primary fermentation. We do a few things differently this time around in the spirit of experimentation. First thing we did was add more strawberries than the recipe calls for; we hope this will end up with fuller and powerful flavor profile. Also, with these strawberries, instead of crushing them, we put them through the torture of a blender! We had a smoothie must! We’ll see if this difference has any impact on the end product.

Lastly, we strayed from the recipe in regard to sugar content. The recipe asked for about 2 lbs of sugar, and we kept it closer to 1.75 lbs of sugar. In our blackberry wine, while it is really young, we felt like the alcohol took over the fruit flavors; so, in this batch, we want to tame the alcohol content so that the wine will achieve a better balance. The members at the Fine Vine Wines Forum recommended that move! Check them out!

Again, we apologize for the video quality, it will be more spectacular in our next show where we rack the strawberry wine and check in on the blackberry batch.

Also, we are VERY HONORED to have a brief article in the latest WineMaker Magazine (Aug/Sep 2007); on p. 10 you will see Stephany and I under their “cellar dwellers” section!

Please drop a line, say hi, ask questions, leave advice, whatever it maybe – please leave a comment :-)

Cheers! Salud!
